Sweet Potato Chili
You will need​

1 large sweet potato
1 large white onion
1 green bell pepper
1 pound ground beef
1 can black beans
1 can kidney beans
1 can corn

2 cups beef stock
1 packet beef bouillon
1 tbsp. tomato paste
1 can tomato puree
1 can diced tomatoes
Garlic
Salt & Pepper
1 tbsp. garlic powder
1 tbsp. onion powder
1 tbsp. cumin
1 tbsp. chili powder
1 tbsp. or 1 tsp. cayenne
depending on desired spice level

In a large pot add your meat to a drizzle olive oil. Once partially cooked add your garlic, tomato paste and beef bouillon packet and finish cooking on a higher temperature. Once browned, add your sweet potatoes, white onion, and bell pepper. Stir on a medium heat for 10 - 15 minutes along with all of your seasonings.

At this point you'll want to add in all of your canned items; the beans, corn, and diced tomatoes along with your beef broth and tomato puree. Allow to simmer for at least 30 minutes but with chili - the longer it cooks the better. Salt & Pepper to taste and serve!

I always like to serve my chili with shredded cheddar cheese and sour cream. You can also include some sliced jalapeños for those who prefer a little more heat. Corn bread or tortilla chips also always make a great addition on the side!
