Broccoli Cheddar Soup
You will need​

1 large head broccoli
Half a white onion
2 - 3 large carrots
2 cups Vegetable Broth
1/2 stick of butter
Salt & Pepper

2 cups milk
8 oz cheddar cheese (shred it yourself PLEASE)
3 tblsp. flour
1 tsp. Paprika
1.tsp Garlic Powder
​
Melt butter in a medium sized pot. Once melted, add your minced garlic and diced onion - cook on medium until fragrant. Add in your flour & whisk for 3-5 minutes until fully combined. Once the flour is cooked out you'll want to add your vegetable broth and your seasonings. ​

At this point you will want to add your washed & chopped broccoli (the smaller the better). And your washed and shredded carrots. Allow for veggies to cook until softened. This would be a great time to shred your cheddar cheese!

Once the vegetables are cooked add in your milk and shredded cheese. Mix until fully combined & thickened. Salt & pepper to taste. I like to serve mine with toasted ciabatta bread. So easy & delicious!

Makes 6 - 8 servings.
