Classic Roasted Tomato Soup 

You will need​

​

             4 - 5 beef steak tomatoes                                                            

            1 white onion                                                                        

            6 - 8 whole cloves of garlic  

            1 tbsp. dried basil

            1 tbsp. dried oregano

            2 tsp. garlic powder

            2 tsp. onion powder

            1/4 cup red wine (shhhhhhh)

            12 oz can vegetable broth 

            1/4 cup half & half                                                         

            Olive Oil                                                                       

            Salt & Pepper

Quarter all of your tomatoes and your onion. Place onto a sheet pan along with your whole peeled garlic cloves, olive oil, and all of your herbs and spices. Make sure your mix so that all the tomatoes and onions are covered with oil and your seasonings. Roast at a 400 degree oven for 1 hour.

Once your tomatoes , onions, and garlic have finished roasting, scoop all ingredients into a blender. Here youll want to dd your can of vegetable broth. Puree until smooth. 

​

Pour contents of the blender into a large pot. Add your red wine and simmer for at least 20 minutes until the alcohol is fully cooked out. Then stir in your half & half. Salt & Pepper to taste and serve! I like to serve mine with a classic grilled cheese or topped with my homemade garlic & herb crutons!
